In the Edivo winery, the wine, instead of being aged in barrels in adapted cellars, rests locked in clay amphorae, hidden under the surface of the Adriatic Sea. Divers employed by the winery systematically inspect the sunken amphorae. Then, after a year or two, the stoneware is brought back to the surface, where it is served on local tables.
After returning to the surface, the amphorae are covered with a layer of sediment that not only adds to their beauty, but also testifies to the time spent underwater. The shells, corals and algae entwining the vessels are undoubtedly reminiscent of the treasures retrieved from ancient shipwrecks in the Adriatic and Mediterranean regions.
The owners of this unusual site are two divers – Anto Šegovic and Edi Bajurin. They explain that the whole process started as an experiment, referring to an ancient Greek practice. After some refinements and working out the right technique, the results surprised everyone. The cold and calm waters became a wonderful cellar in which this unusual and noble beverage matures.
Edivo Vina winery is located about an hour’s drive, north of Dubrovnik. Customers visiting this establishment have the opportunity to wear full diving equipment and visit the underwater cellar where the wine is matured. This includes a sunken shipwreck that serves as a unique cellar in the Bay of Mali Ston.
The amphorae are located 20 metres under water. As the owners boast, the wine develops a delicate pine aroma while aging in these unusual conditions. To prevent water from entering the amphorae, the wine is corked and then sealed with two layers of rubber. The cellars are inspected every 10 days to make absolutely sure everything is going well.
